This is day 3 of the Virtual Cookie Exchange and Christmas Blog Hop, hosted by Carol at Just Let Me Quilt.
What better time than Christmas to share a sweet treat, even if we can't all be together this year, we can always pop some cookies in the mail and share the joy of giving that makes Christmas so merry! Christmas is definitely going to be different for me. Normally I am a Christmas nut but with the loss of my hubby and not being able to have Christmas with all my children and grandchildren this year I am dreading it.
The cookie recipe I will be sharing this year is Cinnamon Roll Cookies. My grandma made the best cinnamon rolls, you know the ones made with sweet yeast dough. Yum, I do make them but these cookies are so much easier and almost as good. I think you'll enjoy them as much as my family does.
Cinnamon Roll Cookies
Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened to room temperature
3/4 cup granulated sugar
1 large egg, at room temperature
2 teaspoons vanilla
Filling
2 Tablespoons butter, melted and slightly cooled
1/4 cup granulated sugar
1 tablespoon cinnamon
Icing
1 cup confectioners’ sugar
3 tablespoons milk
1/2 teaspoon vanilla
Cookie Dough:
Using a mixer, beat the butter for 1 minute on high speed until creamy. Beat in the sugar until completely creamed and smooth, about 2 minutes. Add the egg and vanilla and beat until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed.
Add the dry ingredients to the wet ingredients and mix on low until combined.
Making the rolls:
Divide the dough into 2 equal parts. Roll each portion out in a rectangle approximately 9×7 inches to about 1/4″ thickness.
Kind of a rectangle, but it's all good |
Spread 1 tablespoon of melted butter onto each rectangle. Mix the sugar and cinnamon together then sprinkle evenly over each roll.
cinnamon sugar sprinkled on rolled out dough |
Working slowly, tightly roll up each rectangle into a 9-inch log. If the dough cracks use your fingers to smooth it out. Some cracks are fine. Wrap in plastic wrap, and chill the logs of dough for at least 2 hours.
Preheat oven to 350°F.
Remove dough logs from the refrigerator. Cut into 1/2 inch slices. Place slices onto baking sheets lined with parchment paper 2 inches apart.
Bake for 10-11 minutes, until lightly browned. Remove from the oven, allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before icing.
Icing:
Mix all of the icing ingredients together. Drizzle over cookies. Cover and store cookies at room temperature for up to 5 days. They also freeze well.
I like to place parchment paper under the cookies before drizzling the icing. I reused the parchment that I used when baking the cookies. |
For my Christmas project, I made a pillow top, in traditional colours.
Take a little time to visit the other blogs and pick up some more recipes for sweet treats.

Oh my, I think I need to try those cookies - I have a weakness for cinnamon rolls, so this recipe is right up my alley! Love the pillow, Cindy - it really turned out well!
ReplyDeleteOkay, not I have to make cinnamon rolls for breakfast (the canned kind) as my mouth is just watering. I am definitely going to have to try these cookies. I love the pillow. It is so pretty and festive!

ReplyDeleteCinnamon rolls in a cookie sounds fabulous and delicious...another recipe for my to-do list! Your pillow is gorgeous in those fabrics and it looks so festive. Losing someone we love is always hard, but I can't imagine how hard it is for you during this Covid isolation. Virtual hugs and Facetime with family just doesn't do it. I hope you can spend the day with someone close to you. xo
ReplyDeleteThose cookies look divine. Who doesn't love a good cinnamon roll. Beautiful pillow!
ReplyDeleteCute pillow. The Cinnamon Roll Ups are right up my alley. I must give them a try even if they do sound a bit complicated. Sugar cookies and cinnamon work perfectly together. The roll up part is adorable to look at, too.
ReplyDeleteYUMMY! These look mouth-watering - gotta try these. Cute pillow too!
ReplyDeleteHi Cindy! Gosh, those cookies look delicious. It sounds hard to make but you've made it look so easy. I may just try these this year - we have to have a new recipe each year. YUM and my mouth is watering for cinnamon rolls now. Your pillow is so pretty and perfect for the season. Thank you for sharing with us! ~smile~ Roseanne
ReplyDeleteThose cookies do look tasty - they remind me of a cookie my MIL used to make that she called 'doo dads' made from leftover pie dough. Your pillow looks very festive too.
ReplyDeleteTake care.
The cookies sound yummy. Thinking of you.
ReplyDeleteThe cookies sound yummy and that pillow is just perfect!
ReplyDeleteCinnamon and Christmas are a definite go together. Pretty cushion cover.
ReplyDeleteI love your pillow.
ReplyDeleteHi Cindy, Your cinnamon roll cookies caught my eye as I love cinnamon rolls. I will give them a mention in my next post. I also love the table runner you made in the last post. So pretty and this cushion top is lovely as well. Thanks for sharing your creativity! BTW, I live outside Ottawa, On. Are you far from me?
ReplyDeleteHi Cindy. First of all I’m sending a virtual hug for you for the rough year you’ve had. Losing a husband in these times is so difficult as is the Covid isolation and not being able to be with family at the holidays. I can commiserate with both experiences. Video calling does help as does the connection to our on line quilty family. Thank you for sharing the incredible cinnamon roll cookie recipe (moreCovid pounds going on 🥴) and your beautiful cushion cover. Such festive pictures made my day brighter. 😄 Carol
ReplyDeleteCindy, you have the best designs, and this one is yet another! Love the wee centre star and the rays! This Christmas will just suck, and I'm so sorry. It's even worse without all your loved ones together to help turn at least some of the pain into memories of joy...but maybe FaceTime/Zoom can ease a little of it. I hope it helps to know that you have many friends in QBL as the comments show, and some, like me, who have had the joy of meeting up with you; may it not be too long before we can once again. I will definitely be making these; I have made Jean's individual Christmas cakes two years running now, so it's nice to have another treat to add from my quilty friends.
ReplyDeleteThanks for sharing a delicious cookie (or two!) and your pretty pillow
ReplyDeleteYOur cookies look fabulous. And your pillow is stunning. Thanks for sharing them with us.
ReplyDeleteMerry Christmas! Cinnamon roll cookies sound heavenly; I may need to give them a try. Thanks for sharing.
ReplyDeleteWhat a pretty pillow! I've never tried cinnamon roll cookies, but seeing yours step-by-step and the finished products is hard to resist - thanks for the recipe!
ReplyDeleteHi Cindy: I am still catching up on all the cookie recipe posts and just read yours. They look delicious.
ReplyDeleteI know this Christmas holiday will be terrible. I remember the first set of holidays after my first husband passed away. It was brutal. This is still so raw for you - I am so sorry for your pain. Do you have any of your kids close by? If you are safely quarantined and they have been safely quarantined, could you be together for a bit over the holidays? I know my parents are really the only people we see since my husband and I and my parents all stay home the whole time. We feel like that is a safe thing to do. I hope you will be with someone.
Grief is a slow, personal and painful process. Please email me if you want to talk through any of the feelings. I have been there and would be honored to talk to you if it would be helpful. xoxox
My two grown-ish kids and husband thank you for this recipe. Delicious!
